The Secret to Perfect Stuffed Grape Leaves The heart of this dish lies in the stuffing, known as Hashweh, a savory blend of ground beef, short-grain white rice, and aromatic spices like 7 Spice and cinnamon. To make it, we brown the meat, then mix in the rice without cooking it first. This allows the rice to fully cook while wrapped in the grape leaves, soaking up all the delicious flavors.


Our grape leaves come preserved in brine to maintain their soft, pliable texture. After a thorough rinse and removal of the thick central stem, they’re ready to be stuffed. Each leaf is carefully wrapped around a spoonful of Hashweh, rolled up like a little package of goodness.

Cooking the Stuffed Grape Leaves To ensure they cook evenly and don’t burn, we layer the bottom of a deep pot with olive oil, sliced potatoes, and tomatoes. Once the stuffed leaves are snugly arranged, we add a drizzle of lemon juice, a sprinkle of salt and pepper, and a few slices of fresh lemon on top. To keep everything in place, a small plate is pressed down over the top before adding hot water to cover. Then, it’s time to let them simmer to tender, juicy perfection!
